Barbecue

Barbecue is the method of preparing meat over an open flame or hot coals. Common choices include ćevapi, pljeskavice (burgers), sausages, skewers, marinated chicken, pork neck or chops. A mixed meat platter is a popular option, often accompanied by ajvar or kajmak.

Basic mixed grill – for 4 people

Meat
•    500 g ćevapi (skinless sausages)
•    4 pork neck steaks (1–1.5 cm thick)
•    4 homemade sausages (e.g., smoked or grilling type)
•    4 chicken drumsticks or thighs
•    200 g pork fatback (for greasing the grill)

Marinade (for pork neck or chicken)
•    4 tbsp oil
•    1 tbsp mustard
•    1 tsp ground red paprika
•    2 garlic cloves (crushed)
•    salt, pepper, rosemary or thyme
Marinate meat at least 2 hours before grilling (preferably overnight).

Sides (grill classics)
•    sliced onions
•    ajvar, mustard, kajmak
•    bread or flatbread
•    seasonal salad (lettuce, tomato-onion, cabbage)
•    pickled cucumbers or peppers
•    grilled or sautéed potatoes
