Sljeme frkanci

Frkanci are juicy rich meat rolls in the Sljeme style. Boneless pork is stuffed with cheese, wrapped in pancetta and grilled. They're often served with green beans, potatoes or salad.

Easy to prepare and full of flavour – perfect for a mountain lunch, outdoor barbecue or post-hike gathering.

Ingredients (serves 4)
•    4 boneless pork shoulder or leg cutlets (thin, for rolling)
•    100 g firm cheese (Gouda, smoked cheese or Trappist), cut into sticks
•    8–12 thin slices of pancetta (or bacon)
•    salt and freshly ground pepper
•    mustard or spice mix (optional)
•    toothpicks or kitchen twine

Preparation
1. Lightly pound the pork slices, season with salt and pepper on both sides. Optionally, spread a thin layer of mustard.
2. Place a piece of cheese on each and roll into tight rolls.
3. Wrap each roll with 2–3 pancetta slices to cover and secure the shape.
4. Secure with toothpicks or twine.
5. Grill over medium heat for about 10–15 minutes, turning occasionally until the pancetta is crispy and meat cooked.
If no grill is available, bake in the oven: 25 minutes at 200°C (392°F), finishing under the broiler for a crispy crust.

Suggested sides
•    green beans with onion and garlic
•    sautéed or roasted potatoes
•    fresh salad (lettuce, tomato-onion, cabbage)
•    cornbread or homemade bread

Serving suggestion

Serve hot, straight from the grill, with cold beer, wine spritzer or homemade juice. Perfect for a weekend on Medvednica, backyard gathering or as a hiking specialty.
